Our soft and flourless hazelnut cake
In our laboratory in Cortazzone, a small municipality in Piedmont in the land of hazelnuts of Alto Monferrato, we have been preparing our special soft and flourless hazelnut cake for almost twenty years.
For a cake with an intense hazelnut flavour, soft texture and lower fat content, we use only partially de-oiled hazelnut flour, obtained from roasted hazelnuts pressed for the extraction of their precious oil.
Since 2014, our Piedmontese hazelnut cake has proudly borne the coat of arms of the Municipality of Cortazzone (Italian website).
