After their shelling, the hazelnuts are calibrated and sorted by hand, then toasted and deprived of their external film (perisperm), through a mechanical process that however does not remove it completely.

In fact, on the external surface of the toasted hazelnuts traces of film remain (about 5%) which, according to recent scientific studies, is a good source of fiber and phenolic compounds with antioxidant activity.

The toasted hazelnuts for sale on Shop Baldaiassa are toasted daily with a medium degree of toasting, which gives the fruit the unmistakable balanced and intense aroma. To keep it unchanged over time, they are vacuum packed within 24 hours after torrefying.
